It's been awhile since I've posted a recipe so I thought I would give you this super easy idea for supper. [Did I just use the word supper? I have been in Texas too long! :)] Okay, so here it is: Buy a whole chicken, rinse it with cold water and pat it dry with paper towels. Season it with a salt and pepper and any other seasoning you like. Put it in a casserole dish or roasting pan and bake at 350 for 20 minutes/pound. That's it!
I served this chicken with rice pilaf, a green salad, and grapes. The best part was having leftover to make chicken quesadillas with the next night and even more left overs for chicken avocado toasted sandwiches two night later!
